Japanese Cuisine & Creation

Our mission is to create new original cuisine based on Japanese food culture, fusing and harmonising it with western food culture,
and to deliver delight to people all over the world with our dishes.

After spending his school years in an international environment, he pursued his studies in London, focusing on English, driven by a passion to expand Japanese cuisine globally. Later, while attending culinary school in Japan, he was inspired to become a chef in Europe, motivated by the desire to spread Japanese cuisine worldwide. After three years of training at a restaurant in Kumamoto, he moved back to the UK. There, he studied under the world-renowned Japanese chef Nobuyuki Matsuhisa and successfully held positions as sous chef and chef de cuisine in restaurants in London and Athens. In 2013, he relocated to Geneva, Switzerland, a cosmopolitan city rich in ingredients. He opened his restaurant, IZUMI, in the five-star Four Seasons Hotel des Bergues Geneva, where the creative and modern Japanese cuisine, expressed using fresh, locally selected ingredients, attracts a large number of patrons. In October 2022, he opened the restaurant SACHI at the Mandarin Oriental, Geneva. Additionally, his company offers consulting services, serving as a bridge between foreign chefs interested in Japanese cuisine and Japanese chefs seeking to work internationally.

Restaurant SACHI

Japanese restaurant SACHI opened in Mandarin Oriental, Geneva in October 2022.
As Geneva's first 'Omakase' (meaning 'chef-selected menu'), it offers the pleasure of tasting Chef Tsukada's creations created in front of your eyes. The Omakase menu, inspired by Japanese kaiseki cuisine, offers a choice of 6, 8 or 10 courses and includes a sushi counter with 10 seats as well as a martini bar.
The restaurant was designed by architect and designer Yoshitsugu Kida, who also designed Matsuhisa Paris and Matsuhisa Athens. As a tribute to the Swiss culture that the region represents, the design reflects the atmosphere of the nearby riverbank by emphasising sophisticated lighting, the dark hues, shimmering textures and shapes of the beautiful oak from the local forest. Located on the banks of the Rhone River, the Zen garden-like terrace, landscaped by a Japanese gardener, is the perfect place to enjoy aperitifs, after-dinner drinks and Japanese snacks.
'SACHI' is a Japanese word meaning happiness, blessing or good fortune.
With an emphasis on seasonal colour, the restaurant offers an inspiring array of dishes that will bring a smile to your face and spread happiness.
